This is up to you and your partner. if the amount of plus ones starts to outweight the people you actually know then I would say not. Ctering for all these extra people does cost a bit of money which could be invested into things that would really make your night special. Best to spend your wedding with the people you know and love then with strangers
Every aspect of your wedding is private and customized to you and your partner. If you wish to keep the list strictly to the people you know best, specifically invite that person. People are generally understanding of the need for intimacy or budget constraints. Perhaps research a very pleasant or polite way in which you can say this within the invitation, just to make sure people understand that it's not a personal attack on their partner!
you invite who you both want.. never forget that this is your special day and you will share it with the ones you love, not the ones you may forget :)

Usually the first thing asked when planning a wedding is the number of guests. Decide on your guest numbers and then stick to it as best as possible, as going too far over may blow your budget. You can always have a polite note on your invitations that lets guests know there are no plus ones.
If you have room for plus ones after the initial guest list RSVP's then you can add them on.
