Put simply it's kinda on a spectrum from 'Documentary' - A true adaptation of events in real time. To 'Artistic' - Use of cinematic, slow mo and graphic effects to make the film more emotive. Personal preference picks where on the spectrum you lay. ;)
Can I choose my own music for my wedding video?

Only very occassionaly really. I assume you chose a videographer for their style? Choosing music to fit the story they want to tell is part of their skill set. Let them do what they do.
Requesting music (Which is usualy illegal due to Copyright) is akin to asking for the best spray painter to spray your car then giving him some spray cans and asking him to use those! ;)
Here's a rare example of how it can work. The B+Gs best man happened to be a singer and gave me permission to use the song he'd written for them. However it had to be worked into the film.

How long are wedding video highlight reels?

Usually between 3-8 minutes. But time isn't really the concern. A good editor will make the film the optimum length to tell the story, this may mean making it shorter.
