Thinking ahead I will be designing grazing tables with a mix of gourmet canapes and delicious grazing food (cheese, cured meats, dips etc).
Drinks on tap have become a huge thing! People love getting espresso martinis cosmopolitan and mojitos to name a few. We are finding that the seltzers/low sugar and non alcoholic drinks are becoming very polular as well.
It's really a very personal choice. We always recommend avoiding the "normal" routine or predi table alternate drop main and dessert. We have menus that help you to think outside the square to make yours a stand-out event. Definitely "scale dwon" any speeches as these really hold up food service considerably. But we are happy to run through your own schedules to work out a superb menu that will be spoken about for years.
Trending is "good" food, especially Ottolenghi inspired style - and we have a good repetoire of that.

Pouring champagne towers! Vintage but coming back for sure. Cocktail towers will become a trend we believe ... imagine your favorite cocktails shaped in an impressive 5 or 6 level towers with dry ice for a dramatci smoky effect!! Great pictures guarantueed!

Lately we have been offering a customised greazing board and low alcoholic drinks during the afternoon while the newly weds are getting their pics taken. This allows the rest of the crowd to mingle in a comfortable way while being entertained.
then either a degustation classic dinner or feed me style menu with sharing dishes in the middle for everyone to help themselves. chef keep bringing new dishes to the table.
and for us, its been huge croquembouche for dessert!
