The multi-event wedding weekend: planning more than one celebration
Fine dining on the foreshore: inside Sandringham Yacht Club’s modern culinary experience

When planning a coastal Melbourne wedding, breathtaking views of Port Phillip Bay are usually at the top of the wishlist. For many couples we speak with, however, the venue decision ultimately comes down to what happens on the plate. A stunning sunset sets the mood, but exceptional food and drink are what turn a great reception into an unforgettable celebration.
Sandringham Yacht Club (SYC) has long been celebrated for its prime bayside position. Its modern approach to wedding dining is what truly sets it apart. Moving far beyond standard event catering, SYC combines luxury hospitality, interactive culinary moments, and fine dining quality that scales effortlessly from intimate gatherings to large celebrations.
We sat down with Ashlee Patten, Event Sales Coordinator at Sandringham Yacht Club, to get an inside look at how their team delivers a high-end food and beverage experience right on the water.

Interactive dining that elevates the atmosphere
Modern receptions are all about guest experience. Couples are moving away from rigid sit-down formats in favour of interactive elements that bring energy and movement to the room.
At SYC, additions like live oyster shucking stations and roaming mini desserts give guests a reason to mingle early in the evening.
"Interactive food experiences add an element of theatre and excitement to the reception. Live oyster shucking, for example, gives guests something to watch, engage with and enjoy in the moment. It creates a more social atmosphere and makes the dining experience feel personalised and memorable."

Fine-dining quality on a grand scale
Executing high-end food for a small group is one thing, but maintaining that same standard across a grand reception room of up to 400 guests requires serious precision.
Whether hosting a seated banquet in the Port Phillip Room or a lively cocktail party, the kitchen team at SYC focuses heavily on timing, temperature, and presentation so that no guest feels like an afterthought.
"For us, it comes down to preparation, organisation and having a great team. When you're catering for a large number of guests, consistency is really important, from the quality of the ingredients through to timing and presentation. We put a lot of work into the preparation behind the scenes so that service feels seamless and every guest receives the same level of care, whether we're catering for 50 people or 400."

Comfort meets luxury: what couples are choosing now
When it comes to menu design, today’s couples want food that feels both indulgent and comforting. Generous portions, rich flavours, and familiar dishes executed with fine dining technique are driving modern wedding menu choices.
"We’re seeing couples really enjoy dishes that are comforting and a little indulgent. Some of the current favourites include our house-made gnocchi with a forest mushroom cream sauce, our pan-seared chicken with spinach and cream cheese filling and our chargrilled eye fillet with a Merlot and pink peppercorn jus. For dessert, our Biscoff cheesecake and chocolate fondant are particularly popular, both are crowd-pleasers and a great way to finish the celebration on a sweet note."
