There are many checklists out there (see the Easy Weddings App available for instance) and go through one element at a time. Having an idea of what you want your special day to look like overall, will help with sorting by style also (photographer, venue etc).
Otherwise, if you don't have the time or patience for this, hire a planner!
what information exactly? if its from wedding venues you start sorting on what they can supply and what you have to supply, if its florists and what quotes they are giving you then you have to sort them out by getting the same quote from a few suppliers
