It really depends on your venue hopefully you should be able to have the icecream truck pull up to a private area
If not then wedding guests will be quite differently dressed to the general public so the discretion of the truck operator should suffice

I suggest you organise for someone( perhaps a younger friend/relative ) of one of the guests to be at the Icecream van to monitor it. You could pay him/her a nominal amount for their time.

Thanks for your message! If you are having a ceremony in a public park or public area it is quite easy to spot people who are not guests as they are usually wearing casual clothes ;)

Perhaps work out tokens for the guests for ice cream or sorbet. Get in touch with the ice cream truck and work out best solution.
Another option is little stickers for ice cream.
