If we find our dream photographer, what happens if they're sick on the day and can't photograph our wedding? Would they send a replacement or how does that work?

It's usually in the contract, and, yep, they would likely send a replacement. Or they might contact you and see what you want to do.
Photographers know photographers. We've all got little black books of people we work with -- competitors, friends, etc. A friend of mine does funeral livestreams, and if he can't do a job, then he'll pass the work on to a competitor, and the competitor will do the same for him.
But, for what it's worth, I think most photographers who have been doing this for a while will keep themselves "match ready" before a wedding. Get enough sleep, avoid eating anything that's going to give you an upset stomach on the day, etc.
And even if they're not 100%, hate to say it, but the strong probability is that they'll show up anyway, because they want to make sure the job is done right, and they want to get paid, basically. I know a famous photographer who showed up hungover for a wedding.
It's important to discuss this scenario with your dream photographer before hiring them to ensure that you're both on the same page about what will happen in the event that they're unable to photograph your wedding due to illness or other unforeseen circumstances.

Your Photographer should always have a Backup Photographer. We have three if one of us is sick. WE also make sure they are available before the day or if we have one backup.
This has only happened to me once because of a positive covid infection (fun times)... we always have back up photographers if something goes south! x
I think everyone has covered it below really well.
Photographers know theres no re-dos of wedding days. We either push through, and make sure we cover the day, even if we are unwell (I know photographers who have shot weddings while having food poisoning). OR we make sure someone covers the day for us, normally with a similar style to our own.
The most important thing is to talk to potential photographers about what the back up plan is before booking, because every one will be slightly different.
And make sure the plan is outlined in your contract with whoever you book, so you know it’s agreed on, and you won’t have to question it down the line :)
Most photographers have a big community and are always able to find replacement for the day. I've never canceled or needed replacement and I like to keep it that way, but I do have a list of 10+ other photographers who would always help out last minute ??
This is a very rare occurrence, I doubt you will find many wedding photographers who have had to cancel shooting a wedding due to illness. I would have to very sick, or restricted due to the illness being contagious ( like covid) to not shoot a wedding. A wedding photographer should have this occurrence covered in their contract. My contract says I will give the bride and groom the option to get full deposit back, so they can find another photographer, or I would arrange for another photographer to cover for me. I am connected with many other wedding photographers through my network, and I would usually know what photographer would suit the bride and groom's requirements. Ie a style similar to mine. Additionally - editing is a huge part of the eventual outcome of the images, and I would most certainly take on the role of editing the images from the wedding to be sure the client receives as close to my style as possible.
Check the contract before you engage your dream photographer about things like this. A replacement is usually engaged for you and usually of the same calibre as their reputation depends on it. Best wishes!

As a professional wedding photographer, it is important to always have a plan in case of unexpected events such as falling sick on the wedding day. If I am unable to attend the wedding, I will immediately contact another photographer with a similar level of experience and style to take my place. This is one of those worries that keeps couples up at night, but it almost never comes to pass. In years of shooting we plan our whole lives around your date, so it takes something genuinely serious to keep us away. That said, we are human, so the honest answer is that a good studio always has a backup plan written into the contract before you ever sign.
For us, because we work as a team across both photo and video rather than as a single solo shooter, the first line of cover is each other. If one of us was truly too unwell to shoot, the rest of the team steps in, and we also have a trusted network of South East Queensland shooters we know personally and whose style sits close to ours. The aim is always that you would never feel a difference in the final gallery or film.
The part people forget is that the look of your photos is made just as much in the edit as on the day. Even in the rare case someone else pressed the shutter, the editing would still come back in-house to us, so your images and video are colour graded and finished in our style, not sent off somewhere offshore. That is what keeps everything looking like the work you fell in love with when you booked.
My one piece of advice: when you find your dream photographer, ask to see exactly how this is handled in their contract. A clear, written answer covering both a replacement shooter and the option of a refund tells you you are dealing with a professional who has genuinely thought it through.
