Do you mean serving raw seafood like sashimi, oysters, roe etc? If the supplier has proper cold storage and food safety practices and techniques in place then there should be little risk. If you could give more information on exactly what you're thinking , It would help answering it with more confidence.

Hi Bride to be :) not really providing your supplier is aware of all the parametres, this is not something you would feed your quests unless you are fully trained chef and they can provide the correct transportation/storeage and serving.
