No I dont think it is at all. 

As a coffee cart an alternative I have start offering is a tab to ensure my time is covered and your day is still full of special touches.

For example if you only want me for an hour thats $300 (with 50 cups of coffee included, Your guest purchase their coffee and if enough coffee is sold the total is covered, if not all cups are sold you only pay the difference, making it cheaper for you.

No not at all - I always recommend if you are worried supplying some drinks (depending on your budget / venue) such as wines just on the tables for arrival or beer and bubbles on arrival works well.

I think if guests are made aware in advance it's acceptable. We all have a budget to work within and if they're close enough to be invited to your wedding they'll appreciate that you've a budget too????
