Hi Roya,
Yes I would offer Champagne, we do a lot of champagne breakfasts and it is not only popular, but I feel it is elegant as well, if that is the feel that you are after. I would certainly provide some alternatives such as freshly made smoothies, juice and mineral water.

My advice would to be offer fresh orange juice and also champagne
Guests can then make the choice to drink just the orange juice, just the champagne or a combination of both

Yes you should offer champagne as it is considered a celebration drink, can substitute with a sparkling wine. Common courtesy towards the guests.
