Guests always love champagne at any time!
My suggestion is to offer it with fresh orange juice so that the guests have a choice of having just the juice or just the champagne or a combination of both a bucks fizz

For Breakfast Weddings, it is quite Traditional to serve Champagne and Mimosas as an elegant drink offering.
Mimosas can be half Champagne half Orange Juice Or there are variations like Cranberry Mimosas which are ideal for Breakfast.
They are also called Sunrise Cocktails or when Champagne is served with Breakfast it is called a Sunrise Breakfast.
The Spit Roast Company always suggests that Champagne mimosas be served, to their Client Couples on their Big Day.
ABSOLUTELY!! Although I am a chef and we are known for our drinking habits..... No in all seriousness, it is entirely up to you whether or not you serve Champagne. Depending on the timings of your day I would suggest that you should have champagne available but having said that you know your guests better than I do. I would imagine that you are serving your wedding Breakfast at probably around 10:30/11:00am after a 9:30/10am ceremony. Your guests are likely to drink a lot less than a dinner reception however most of them are proably imaginig a beautiful champagne breakfast to celebrate your special day.
The style of catering that you provide may or may not also lend itself to the service of alcohol for instance picture smoked salmon & dill cream cheese bagels and mini quails eggs benedict with a glass of champagne at a cocktail style breakfast vs sit fruit platter & banana muffins which lean more towards a long black and a glass of oj! In the end its your wedding day and its about yourself and your fiance but also keep in mind the context of the day....its a celebration of your love for one another.

Well whats a wedding without champagne!!! Definitely yes, you can always mix it with orange juice.
There are no protocols apart from responsible service of alcohol. You will need to be aware of your guest's anticipations. It should be entirely your perogative whether or not you indulge your guests with any range of drinks.
