How do caterers handle multiple allergies?

My cousin has a whole host of allergies. How do caterers handle this? Should I ask her if she feels more comfortable bringing her own food?

At HC Catering when it comes time for finlaising things, we discuss with our client, how many dietary guests they have and then we plan food suitable for each person, for a small surcharge. We communicate with each of those guests the day prior so they can have peace of mind before they even turn up, that they will get food suited to their requirement and won't go hungry at your event. 

When does the caterer need finalised choices?

At HC Catering, as we have very busy weeks, we ask you to finalise your numbers, food and dietaries 3.5 weeks prior, as this enables us to plan each week, for ordering and staffing events. 

Catering alternatives to a sit-down dinner?

So many options are available to you! Our catering company, Hot Coals Catering, does alot of cocktail type service, where our staff are trained in getting food out to your geusts wherever they are at the venue! This is a very popular service style, as it means your guests can mingle and not get stuck next to someone for the whole event. 

Also very popular right now are grazing tables, or anitpasto platters, where people can help themselves to what they want when they want it. 

As a vegan, should I be expected to serve animal products at my wedding?

it is entirely your choice. It is your day and no one can "expect" you to do anything! As a caterer, Hot Coals catering are very happy and able to provide entirely vegan menus. However, what we can say, is that  in our experience, we have noticed at some entirely vegan weddings, the non vegans may miss their meat & dairy items, and have on occasion becaome a little dissappointed in us as a caterer, that there are no non vegan menu choices for them. So, we would simply suggest, in planning your menu, that you consider that. 

Is pizza suitable to serve at a wedding?

Absolutely! Our compmany, Hot Coals Catering , incorporates pizza into our fingerfood choices so your guests can have delicious woodfire pizza slices served cocktail style along with all our other fingerfood otions. 

Do wedding caterers provide plates?

At our company, Hot Coals Catering, we can provide anything you need for your event.  From crockery, cutlery to glassware, chairs and tables, we can provide it all. And we also have connectipns for photo booth, marquee hire and other services!

Do caterers let you taste their food before you book them?

Just wondering if it's standard to taste test a caterers cooking before you hire them. The food is SO important for my wedding and while the people I've been looking at LOOK good, how can I know they TASTE good too?

Absolutely we at Hot Coals Catering agree with you! This is why we run monthly Tasting Nights where people get to come to our beautiful venue in Hurstbridge, meet the team, see how we cook and present the food, then taste it! We make these events like a bit of a casual cocktail party so we have a mix of clients, potential customers and suppliers eattending each one! We try to incorporate some items from each customer's quotes, plus other items they may not have considered!

Is it acceptable to offer these drink choices?

1: 3/4 types of beer 2. One type of cider 3. Red wine 4. White wine 5. Moscato 6. Tequila 7. Soft drinks (coke, coke zero, lemonade, OJ) 8. Still and Sparking water 9. Champagne Is this enough?

Is it rude to ask guests to pay for their meal?

I personally find it rude, but a wedding I am invited to has done this

I too think it is unusual - but - are there circumstances around this? I think this is something I cannot answer without knowing the sitiuation, and the people involved etc! And it may be necessary to consider travel and accomodation too! Everyones situation may be different so this is up to you to decide what is right, and appropriate, I think! 

Should we have an open bar?

My friends are big drinkers. Can we ensure it doesn't get too messy?

We often recommend not having your bar open for too long, before any food is served! We don't want your guests to be tipsy befire they get a bite to eat! Hot Coals provide experienced and RSA qualified Bar staff for just this reason, as they know how to keep things nice at your event! 

What is your preferred dining style?

Not sure whether to do buffet, food truck style, sit down on cocktail! They all have their benefits and this is the one thing I am vague on

Haha what is 'our' preferred style? That doesn't matter!! We are here to provide our guests with exactly what they want for their special event. We are all about allowing our customers to have a stress free event so they gcan enjoy it with their friends and family! Whatever type of service you choose, your event will be fabulous! 

My guests don't have dietary requirements. What kind of catering package can you suggest for me?

The world is your oyster! It all depends on what you and your partner want, and what your budget will allow. At Hot Coals Catering, we don't do one size fits all packages, as we find that everyone wants something different. We tailor our quotes to exactly what our customers are looking for, no 2 quotes are the same!

Can we bring in our own caterers?

My fiancé and I are wanting to bring in our own catering people in but don't know how to go about it. We are wanting a beach wedding.

There are many considerations, but many venues wilkl alow you to bring in caterers. We are 'preferred caterers' at several venues including wineries and garden venues. If you are wanting a public venue such as a beach though, you will have to speak to the local council as there may be specific requirements and permits needed. Speak to your caterers who will guide you through the process.

I'm wanting a huge grazing table at my wedding- do many caterers offer this?

HC Catering

A Hot Coals it is completely up to the customer! We have a number of service types, (fingerfood, platters, buffet, table service) and many brides incorporate several service types throughout their event. Grazing tables can be very popular - we find our customers particularly love a dessert grazing table, as we can set it up and go home, saving them money on our service! Also popular right now are share platters on tables, forcing guests to interact with each other and be sociable - a lovely idea. At the end of the day, you are the customer, and it's our job to provide what you want! 

How old is the cut off for kids meals?

Since kids meals are cheaper, how old does a child have to be before I have to pay for an adult meal for them? I'm trying to decide whether it's worth inviting children at all if I have to pay for expensive meals they probably won't even enjoy.

At Hot Coals catering, we don't do 'kids meals' as such. When planning for how much food, we take into account the ages and how many kids will be present. We find that kids over 10 often eat as much as some adults. When we prepare a quote, we advise our clients how much food might be required for the total number of people, taking into consideration depending on how many kids are attending. What is the average cost per person for catering?

There is no easy way to answer this question! It really depends on the bride, the type of event they are hosting, and the types of foods they would like to supply! Questions to consider might be: Where is the event being held? How long will it go for? What foods might your guests like? Is it a fingerfood event or a sit down event? Is it casual or formal? How much money do you want to spend? A really broad range might be from $20 to $100 per person, however we find many clients end up spending between $35 to $80 per person (not including alcohol).

What's some good things to serve during cocktail hour?

At Hot Coals Catering, we find that pretty much anything works during cocktail hour - the key though, is small portions, as people may already have their other hand holding a drink - so nothing that requires two hands! Nothing messy, as people want to just pop it in their mouth & get on with chatting to friends & family!

What are some unique catering ideas for my wedding?

I am not interested in a sit down style meal, and I hate buffets. Is there other ways to do this? The only one the interests me so far is food trucks, but can they feed 200 at once?! Should I have a few? Do most venues allow food trucks?

Food trucks are fabulous, but can be tricky for you as a host, as there is a chance the vendors will only have a limited number of each food - once they sell out of an item, your guests may then miss out. For your peace of mind, it's better for you or your wedding planner, to choose a caterer to provide some foods that will be catered to your exact number of guests. that way, no one misses out! I'd suggest your caterers can come to your venue and serve food cocktail style, ie by wait staff handing it around to your guests.

Are caterers generally willing to incorporate some items you really love?

Or do most just have set packages?

Absolutely! Hot Coals Catering will always quote on whatever you would like, as we understand that sometimes people have their heart set on something special! This is why we don't do 'packages' as we believe that every event is unquie, and one size definitely does not fit all!

Do many caterers provide vegan alternatives?

A lot of my friends are vegan (30% of our guests) and I don't know how to navigate the food issue as my family all eat meat and will want it.

Absolutely. Hot Coals Catering can provide for any dietary requirements. We have experience in dealing with all sorts of allergies, and requirements.We can create or adjust our menu items as needed. The key is to ask, on your invitations, for people's requirements so your caterers have time to plan! (Just this weekend we have created options for someone who cannot have gluten or fructose - that is challenging, but at Hot Coals, we are happy to help!)

How many canapes should you serve during cocktail hour at a wedding?

At Hot Coals Catering ,we will take the time to talk to you about how you envisage your event. It really depends on how much food you will be serving at the main part of the event, the time between the wedding and the main course, and your crowd! If it's to be a long time between the wedding and the mains, you might want more canapes.
