Firstly, marriage in Australia is the union of two people for life.
If you're getting married just for visa purposes, then no.
However if you need to be married to your chosen partner, the marriage still needs to be legal.
It can be between you, your partner and two witnesses over 18.
You must sign documentation to validate your marriage.

Hi there. We're considering a weekday wedding, maybe a Thursday or Sunday. Is there anything ] different or unexpected we'd need to consider about having a non-Saturday wedding?

Just be aware of extra work day traffic on the roads.
Some hairdressers don't open on Sundays, however, there are plenty of mobile options.
As others have mentioned, your Guests will need a little more notice to take the afternoon off work for a Thursday.
Some places will ask you to finish earlier on Sundays, but start your package earlier.
