No. Payment in full is required at time of booking. Payment can be done by either Visa or Mastercard.
The government requires you to submit a “Notice of Intention to marry” form at least one month prior to your intended wedding date. Once you book a Simple Wedding, you will be provided with that form. You will then be able to submit it the form to Simple Weddings, in order to meet that legal requirement of “One Month’s Notice”.
Yes, you can choose to book by phone during business hours, or you can book online, 24/7.
As soon as you have been legally married by Simple Weddings, you can then apply for the “Registered” Marriage Certificate (the version required for Immigration purposes).
Births, Deaths and Marriages in each state have different processing methods and time frames and they can vary.
Generally the waiting time is around 5 weeks from the time you apply.

Is it the norm?
Simple Weddings
I'd say that many if not most brides seem to still change their surname; although the practice seems to be far less popular than it was, around 30 years ago and more. It's a traditional thing to do in Western culture but it is certainly not a cultural "requirement". A lot of brides nowadays decide to keep their birth surname for various reasons, for example because they are well known by that surname in their professional environment, etc - and if they changed it, they fear they may lose recognition or awareness. It makes sense if your surname is part of your personal "brand".
In my experience, many if not most husbands would probably prefer that their bride change surname to match, based on the tradition and in a way, perhaps, it's flattering or "honouring" to the husband.
Should you change your surname? It's not my place to say. How do you feel about it? How does your husband to be feel about it? It's worth a discussion. You can elect to change your surname or equally, elect to retain your birth/pre-married surname. It's up to you!
Can my vows be funny?

Yes, you can be as funny as you like! How you express yourselves to each other (and to your wedding guests) is really a vivid reflection of the people that you are - in your case it sounds like you're both fun-loving, hilarious people. A sensible couple, who are sensible enough to not take life too seriously.
I've conducted hundreds of weddings in which both the bride and groom said funny things to each other as their vows. In some cases they were eye-wateringly funny,

Advice for having your dog in your ceremony
Would love some advice! We def want to include our dog in our wedding ceremony! We want him as the ring bearer. Are they are any things to avoid or prepare for in advance? Thanks!

Is your dog a Rhodesian Ridgeback x American Staffy? Trained to hunt wild boars? This scenario may have a tendency to go awry on the day. If, on the other hand your pet is nicely domesticated and relaxed around people, it's a fun idea to have your beloved pooch as Best Dog. I would recommend that someone familiar with your pet might offer to be a "handler' and assist your four legged wedding guest when it comes time to actually offer the ring to each of you. (ie undoing the ribbon that the rings are attached to Poochies' collar and handing the rings to you). This sort of consideration can really help. If your dog is an integral part of your lives, well, it's natural to include him/her/she/they? in the ceremony. I've done dozens of weddings including pets, in much the same way. (None with reptiles or aquarium creatures, I hasten to add).
