Any one of the wedding couple can obtain a marriage certificate following the ceremony from the Office of Births, Deaths and Marriages in Victoria, or whichever state the ceremony was performed in. They can then apply to departments that administer identification, such as the Electoral Office or Medicare in order to change their surname on their records. A marriage certificate will not change the name on an original birth certificate.
The marriage certificate you receive at the end of the ceremony is commemorative only, it will not support your application to change your name. I will lodge the official documentation with the Registry of Births, Deaths and Marriages on your behalf. You should then contact the Registry directly in order to obtain a legally recognized certificate.

This is not a legal component of a wedding ceremony, however, if it is something you would like mentioned on the day then of course it can be added. At the end of the day, as long as the legal elements of your ceremony are covered then it comes down to what you as a couple want.
