Expert Advice

As a wedding professional, Priscilla's Cakes offers expert advice to help couples plan their perfect day. Ask a question or read their expert advice.

How far in advance before the big day do you order your cake?

It's not uncommon for a bride to book her wedding cake between 3-6 months before the wedding. As things begin to fall in place,  you have a better indication as to what colour, design and a rough idea of the number of guests you need to cater for. This also means the design and dicussion is still relatively fresh in our minds, and also gives the decorator ample time to organise stock for decorations.

What are my options for decorating a wedding cake?

I've seen geode cakes, naked cakes, fondant... what are my options?

Naked cakes are currently trending at the moment, and are the cheapest option. These then can be added with fresh flowers, macarons, drip (chocolate or royal icing) or even fresh fruit such as berries. However you will need to take into consideration that fresh fruit such as berries need to be added to the cake at the very last possible minute to avoid berriy juice seeping. Also the temperature of the day can makethe cake unstable so your decorator must ensure that you cake will not collpase in the heat being so soft. As a naked cake doesnt have the external support of ganache & fondant to help stabilise the structure.

You can also have a buttercream decorated cake. People tend to opt for these for an ultra modern look, or because they simply don't like the taste of fondant. However, once again, these can require refridgeration depending on the buttercream used and the temperature.

Fondant cakes can be made to look tradtional, vintage, or modern.

These can be decorated using various moulds, stencils, lustre dusts, gold/silver leaf, piping detail, paints, marbling effect, ruffles (or other textures) sugar/fresh/silk flowers (or other floral arrangements such as cacti, branches, leaves)

And then there's acrylic cake toppers or monograms, roman numerals etc...

Hope this helps!

Do you do wedding cheesecakes?

Hi there, as delious as they are I don't make wedding cheesecakes for 2 reasons - 1. One needs to hold a Class 2 kitchen registration in order to sell perishable foods and 2. because they would require refridgeration, hence you cannot have them out on display waiting to be cut.

Are there gluten free options for cake?

After advice on gluten free options. Worried having a gluten free cake will result in no one eating the cake.

I currently have a bride whereby her sister is can only have GF food and she is her bridesmaid. So in order for her sister not to miss out, while the actual wedding cake will be of a regualar recipe, she has opted to get 12 GF cupcakes to compliment the wedding cake design and therefore her sister will get to have some cake on the night.

are naked cakes cheaper than other wedding cakes?

Yes they are, mainly because they are rustic looking and therefore less time is needed perfecting the perfect fondant finish. Less ingredients used as well. Also, generally naked cakes are decorated using fresh flowers, again cheaper than hand made sugar flowers.

The only thing to watch out for is choose your decorator wisely as this type of cake can dry out quickly and a good decorator will know how to avoid this.
