The weather is expected to be very hot but we don't want to sacrifice our dream. We'd love to have our wedding outside and under the stars but we don't want even sweating off their makeup and hating the day.

hydration is the key. one wedding i worked at was a 40 degree day and while there was beer for the guys no one had anything for the bride after the ceremony and while photos were getting taken. The last thing anyone wants is to get sick at thier own wedding. Have plenty of water and cool drinks on hand. Some options for shade will be a relief for everyone as well.

Book a venue with shade eg Botanic Gardens. Choose light weight wedding attire for the bridal party. Have tubs of ice to keep bottles of water cold. You may even want the guests to share something stronger after the ceremony.

This is a really hard one as you really need an alternative location so that you can change to indoors if raining or if it is boiling hot. If you have elderly people (Grandparents) there or new babies you don't want them passing out because of the heat and depending on where your wedding will be the weather is very unpredictable. If they are forecasting warm weather it is always good to have bottles of cold water available throughout the ceremony as well as shade umbrellas and don't forget the insect repellent.

Unfortunately, the one thing you can not control in an Australian wedding is the weather.
But it is always a great idea to provide shelter in the form of marquees, iced water + hand held fans to assist with soaring temperatures.

Choice of venue with plenty of shade is important. Organize a supply of iced water to be available for guests and perhaps set the dress code as 'elegant but cool'. Request the celebrant or MC to announce that 'gentlemen may remove their coats/ties if they wish'.
Under the stars in November sounds great! Iced water with some lemon or lime (or both!) makes a very refreshing drink for all ages. Serve in jugs to be environmentally friendly.

Choose a ceremony location with shade, hire a marquee, or provide some unbrellas, although the latter doesn't look great in photos. Ensure you have some refreshments available i.e water bottles.

This is a hard one. Lots of very good quality Shade Sales erected with commercial size fans stragically placed. Keep the breeze flowing through. Marquees can be very very hot, personally, I would not go down that road.
Also if you can find an outside venue with lots of shady trees. Work out where west is and decide where you will be standing for the actual ceremony. You can have a bit of fun with this if you like. Maybe, go to a cheap as chips store and buy so many beach hats or supply hand held fancy fans. Lots of Ice Cold Water constantly on offer as well as the alcohol ( as we know alcohol is a dehydrator) . One last suggestion for me is to ask your venue to supply ice cold face washes to your guests. If you can afford it offer the ladies a rose water face spray each - gorgeous.
