ive read heaps of forums with brides saying their photographer missed the 'dress hanging up shot' etc. to avoid this happening to me, should i be making a list of shots i want for my photographer?
if i have a bad experience with a photographer should i negatively review them?

I feel like both sides of the story should be given a chance to explain, to have a poor review over a misunderstanding would be an awful shame.
If that didn't work out, it is certainly a good idea to let the world know, others should not be afflicted with the same bad experience.
can i ask the photographer to only be present at the ceremony?

Sure, it's up to each photographer if they have a minimum booking time.
(I do one hour as a minimum, but I understand the case for those who book a minimum day or half day.)

If there are shots that are important to you, certainly.
Often it will be a surprising moment that becomes the favourite shot, and while we will cover the event to the best of our ability, speak up if there are one or more really important pictures for you.
While we make our best effort to capture them all, each couple will want something slightly different, and should be listened to accordingly.
So far, the first kiss seems to be the only universal image requested, so please speak up!
