If there are exceptional circumstances e.g. medical reasons, someone leaving the country, then you can apply for a 'shortening of time' and if granted, get married in 2 weeks. Otherwise at least 1 month is required before your wedding day to complete legal paperwork in preparation for your marriage.
You can light a candle, mention them, recite a poem in their memory...there are many ways to acknowledge those who are no longer with us at your wedding.
Families are complex. If you decide you don't want your dad to walk you down the aisle then that is your choice and it should be respected. You can arrange a time to meet with your dad and let him know of your decision, with or without your fiance. If you don't feel comfortable with this, then you could write a letter or an email. You may choose to give your dad another role such as being a witness, reciting a poem, or doing a speech at your reception. None of this is necessary either however, you shouldn't feel you need to justify your decision.
Kids at a wedding are often a point of contention. If you decide to not invite nieces/nephews to your wedding, then explain to your sister that you have chosen to have a child-free wedding and that you can celebrate with her kids on another day (if you want to). That you would still love to have her at your wedding, but that you hope she understands and respects your decision, after all it's your day and you can choose how to spend it.
