Hi! I'm one of those people who started out as something entirely different in work life. I was a medical secretary for >30 years before becoming sole carer for my late father. Then, I had another year where I renovated my home, took some big holidays, then studied to become a Civil Celebrant. BUT I've done weddings before, as a Chaplain. Therefore there are no reviews or photographs of these due the participants being currently serving ADF personnel. I have done & will do same sex weddings.

Yes. While the timeframe is "doable", a lot all depends on how much time and effort, and expense, you are willing to put in. However, what may hold you up is Government Registration, as this is the part that takes the longest.
What can you say other than life partner and husband and wife?
wondering if there are any other ways to describe each other in our ceremony other than life partner, or husband and wife?

You can do that in your personal vows. However, on the official paperwork and legal vows, you can only use husband, wife, or spouse.
What time should my ceremony be?
We're making a ceremony local due to a close family member that can't go far. Our reception venue is 1 hr away, We'll need to arrive around 6:30-7pm at reception. We have a wedding photoshoot prior to the reception venue, this will be about 2 hrs.

I would say that, with the times you have presented, that anything from 2-3pm would work. My best advice would be to tell guests 2.00-2.15pm and start the actual ceremony at 2.30pm.
That then doesn't cram too much together, and means you will enjoy your day.
